Unlike conventional indoor mushroom cultivation, the goal is not to control every aspect of the environment. Instead, we work with natural cycles of temperature, humidity, and seasonality, designing the growing system so that the fungus can thrive under outdoor conditions.

A Mushroom Bed can become part of a vegetable garden, be established beneath trees, occupy an underused area of a garden, or be incorporated into a productive landscape design. With thoughtful planning, a single space can combine plants, fungi, and other elements of the ecosystem, creating multiple functions and harvests.

From the Traditional Vegetable Garden to the Fungal Garden

Two Species, Two Seasons

Oyster Mushroom (Pleurotus ostreatus)

The oyster mushroom is one of the best-known and most rewarding species for anyone beginning to grow mushrooms.

It thrives in cool temperatures and, under suitable conditions, fruits mainly during autumn, winter, and spring.

An oyster Mushroom Bed can typically produce mushrooms from September through May, taking advantage of the cooler months of the year.

Pink Oyster Mushroom (Pleurotus djamor)

The pink oyster mushroom offers a particularly valuable characteristic: it is a thermophilic species adapted to warm temperatures. Its fruiting season is concentrated during the height of summer.

This makes it an ideal complement to the common oyster mushroom, extending mushroom production into the warmest months of the year. In our experience, it fruits reliably at ambient temperatures between 25°C and 35°C (77°F–95°F).

Together, these two Mushroom Beds illustrate one of the most interesting principles of outdoor mushroom cultivation: the goal is not simply to grow mushrooms, but to design a production calendar that follows the rhythm of the seasons.

Other species well suited to Mushroom Beds include the Wine Cap (Stropharia rugosoannulata), Enoki (Flammulina velutipes), the Straw Mushroom (Volvariella volvacea), and the Phoenix Oyster Mushroom (Pleurotus pulmonarius).

A Growing System That Can Last for Years

One of the greatest advantages of Mushroom Beds is that they are not designed as single-season crops.

When the substrate is appropriate, the mycelium becomes well established, and environmental conditions remain favorable, a Mushroom Bed can continue producing mushrooms for several years.

Rather than preparing a substrate, harvesting once or twice, and starting over, we are creating a living production system that evolves over time.
